Good bye 2016!

Posting here rather than doing up a little Christmas newsletter. Oh, man.... 2016.... not sorry that it's coming to a close. And that's just in my life, not even considering all the stuff going on in the world!

Nothing terrible, just a lot of little stresses. I'll get the complaining out of the way first:

  • I'm in Regina (this will show up on the happy list, as well). 4 hours from my mom and sis, 6 1/2 hours from Omar and everyone in Winnipeg. And because I'm here, I'm spending $14,000-ish a year that I wouldn't need to if Omar and I could just manage to live in the same house for once.
  • And speaking of money. Always money. Just taking me longer to get my finances in order than I had hoped. But getting there!
  • Sweet Cleo (she'll also be on the happy list). The treatments aren't so bad but watching her become more frail makes me incredibly sad.
  • Health stuff. Again, nothing major but as Leonard Cohen says, "I ache in the places where I used to play."
On the other hand:
  • Regina is good!
    • Have been getting out and doing lots of stuff. Took kayaking lessons in the summer, taking curling lessons now. Visited Moose Jaw and the Corner Gas set twice. Have been to the Legislative Building, Government House, the RCMP Heritage Centre, the museum, the botanical garden and the MacKenzie Art Gallery. Hiked at Buffalo Pound Provincial Park. Went to a Riders game. Am a regular at the Farmer's Market and public library. Go to Wascana Park all the time.
    • Now that I'm in the middle, I've had lots of visitors. Waaay more than when I lived in Winnipeg. Lindsay and Valerie from school. Nicki from Calgary. Colin and the boys. Alison. Mom. Clark and Jasmine. Adam and Ayva. I love it!
    • I also really like my job. Always interesting. Work with great people. And I like my apartment.
  • Cleo. That little cat makes me so happy. We've gotten into a nice routine and she is enjoying being an only pet. She's an awesome traveler so whenever I head East, I strap her crate into the front seat and turn on the heaters and we're good to go. I know that our time together is limited but that just makes it more special. She's really gotten me through the last two crazy years.
  • And yes, getting older and creakier but started running again in the spring and was part of our work marathon relay team. Was super fun. Have fallen off the wagon the last couple of weeks now that it is cold out but my gym membership at work kicks in tomorrow so will be back at it this week.
Here are the highlights in pictures:
Cleo under cover.

April - Corner Gas set with Lindsay.

June - In London with Mama for grad.

July - Chillin' with Lexi.

August - the fam damily.

August - my one and only Riders game!

August - girls camping weekend at Spruce Woods.

September - crossing the finish line.
That's about it! Wishing you all a very happy Christmas and the best for 2017!

christmas cookies

Missed decorating last year due to a hectic work schedule, but we figured out a time that would accommodate this year's hectic work schedule. Very happy it worked out because I love this tradition! We squeezed a lot of decorating into two hours.

Can't wait to eat these!

Ayva went all out on her cookies for Santa. I'm absolutely positive it will result in bigger and better gifts. Seriously, how could Santa resist?

Ayva upping her game
Ayva and I made our annual Omar and Adam cookies. She asked me why Omar was wearing a belt and boots, but no pants. Several saucy answers came to mind but before I could say any thing, Marilee saved me by joking that his pants were invisible. Ya, invisible pants, that's what I was going to say...

The Omar and Adam cookies.
A HUGE thank you to Marilee for organizing, baking and making us a snack!

38 degrees below zero (with the wind chill)

My shift at Silver Lotus was cancelled today due to the blizzard that blasted through the last couple of days. Loads of snow + frigid temps = no customers. I love working there but I'm very happy to have the day at home. Have spent an hour and a half shoveling and have at least another hour to go. Following the new NY mayor's advice.... getting low, using my knees. May have heard that advice a time or two before (right, mom?).

This afternoon is a Downton Abbey-a-thon. Re-watching the first three seasons (while knitting, doing laundry and drinking even more coffee) in eager anticipation of the start of season 4. Two more days!

Then noodles for dinner and back out to shovel. Possibly followed by a hot bath. Actually kind of a lovely day.

Here are a few random pics from the last couple of weeks....

Christmas Eve with O. and his family.

George Harrison, who goes home tomorrow.
Waiting for his person to fly in from NYC.

6 weeks into winter... 10 more to go?!?

winter solstice

Solstice Fantasy
We wake up at 7 a.m. in our old farm house in the country. Omar gets a fire going in the big stone fireplace while I make coffee. We snuggle in front of the fire drinking coffee and watching the sun come up on a crisp winter day. Then we have a big brunch.... eggs, pancakes, hashbrowns and more coffee. Around 4 p.m. we strap on snowshoes and take the dog out for a long walk as the sun sets. Then back to the house, stoke up the fire and enjoy pot pie and red wine. Then early to bed (heh heh). The whole day would be a break from the hectic Christmas season and frankly, day to day life. I love the idea of Solstice. I love winter but I love summer more and I feel like the turning point to spring should be celebrated. Someday maybe this will be how it happens but in the meantime...

Solstice Reality
Up at 6 a.m. Walk the dog by myself in the dark in -28 (-39 with the wind chill) weather. Shovel the driveway by myself in the dark in -28 (-39 with the wind chill) weather. Make coffee, eggs and toast. Spend the morning cleaning the house and getting mentally prepared for 6 hours of working in retail on the last Saturday before Christmas. Work those 6 hours with a smile on my face (it's the most wonderful time of the year, after all). Pick up Christina's dog and car. Scrounge up something to eat. Finish cleaning and then (the highlight of the day!) pick up Danette at the airport. Tick off another day in the countdown to my Christmas break. 3 more to go!

fortune (?) cookies

Spent six bloody hours making fortune cookies today. Quel désastre! I put great faith in Martha's recipes but this one was baaaaad. The oven was too hot, the cookies too small.... Checked out some other recipes online and adjusted as I went along. In the end, I got enough good ones for tomorrow evening but I'm super grouchy now. And still have an evening of baking and cooking ahead. I see a glass of wine in my near future...
First attempt. Oven at 400 F as per recipe.
Lowered to 300 F after this mess.
Second attempt. Damn thing wouldn't unstick from the pan.
Wasted quite a bit of batter this way, then borrowed a
non-stick pan from my next door neighbour.

Third attempt. Temperature is good. Pan is good.
Folding technique needs work. You have to work fast,
and the bottom of the cookie should be on the inside.

Finally!

Managed a dozen half-way decent cookies.
Recipe is supposed to make 3 1/2 dozen.
Ugh.
Thankfully my other baking turned out great
or I'd be hanging up my apron.

Our fourth year taking baking to our neighbours.
Was a good way to meet people the first year
and we've kept up the tradition.

martha stewart, eat your heart out

Ready to decorate.
Et voila!
Second annual Adam and Omar cookies.
Spent a lovely afternoon at Marilee's apartment eating cheese and crackers (and fudge and oranges and chips) and decorating cookies. This has become an annual tradition and one that I really enjoy. Marilee and Heather made the cookies and icing and I just had fun. Thanks to my previous blog post, no Christmas music was played, though Ayva did mention several times how quiet is was. What can I say.... we were concentrating!

bah! humbug!

I have been feeling very un-Christmas-y this year. My sister and I had a conversation about it, and came to the conclusion that our combined 21 years in retail was the cause. For me, it was 10 years of the same damn songs played every 2 hours for 6 weeks, and the exhaustion caused by unending lines of rude people.

But yesterday the holiday spirit kinda kicked in, and this morning after many cups of coffee, it full on kicked in.

Was reading my dear friend Tracy's blog last night, and had she posted a picture that made me laugh and laugh. It made me laugh at the time it was taken, and 9 years on (!) it hasn't gotten any less funny. It did make me miss her though, and wish that I could go back to 1999 again and spend Christmas with Tracy and her dad.

And then this morning, I did some baking. Made spiced almonds and double chocolate biscotti for my friends Robert and Kari, in exchange for Kari's old treadmill. Maybe not a fair trade, but not one I'm going to argue with either.

So, in the spirit of the season, here are the recipes for the treats I made. Both very easy and both totally delicious!

Lohz (Spiced Almonds)
The almonds are adaptable to every taste. I'll give the general instructions, and then some spice suggestions:

  • 3 tbsp vegetable oil
  • 2 1/2 cups of whole blanched almonds
  • generous 1 cup of light brown sugar (though I prefer a scant 2/3 cup dark brown sugar)
  • salt to taste
  • spices
Heat the oil over med-high heat. Add the almonds and 3/4 of the sugar. Toss together and stir until the sugar is caramelized and the nuts are coated. (You have about 12 seconds when everything is perfect, then the oil comes out of the nuts and the sugar crystalizes again... but don't worry if this happens, everything still more or less sticks together.)

Remove the nuts from the heat, and toss in the spices. Spread the nuts on a cookie sheet to cool and dry. They can be served slightly warm, or stored for several weeks in an airtight container.

I use about 3 tsp of spices. Today I used cinnamon, allspice, ginger, cardamom, white pepper and cayenne. You could also try cinnamon, nutmeg and cloves; cumin, cayenne and cinnamon; cinnamon, ginger, allspice and coriander; cumin and crushed chili... the possibilities are pretty much endless.

Double Chocolate Biscotti
This was my first attempt at baking this dry cookie. They aren't the prettiest, but man are they good thanks to a brilliant last second decision to add a Green & Blacks orange spice chocolate bar, rather than bakers chocolate. This obviously opens up the flavour possibilities greatly. Going to try an espresso chocolate bar next time!

  • 1 cup all purpose flour
  • 1/3 cup unsweetened cocoa
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 large egg plus 1 egg yolk
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 1/4 cup vegetable oil
  • 1/2 cup walnuts, chopped (I left these out)
  • 3 oz dark chocolate chopped (this is where I used the chocolate bar)
  • 1/4 cup finely chopped crystalized ginger (also left out because I didn't have any)
Preheat oven to 350. Line a baking sheet with parchment paper.

Whisk the dry ingredient, except the sugar, together. In a separate bowl, combine the egg and sugar. Beat until light and fluffy. Add vanilla. With a mixer on low, beat in the rest of the ingredients until combined. (I found that my mixer couldn't handle the dough as it is very stiff. A food processor would probably work better).

With moistened hands, shape the dough into 2 logs (9" x 2 1/2"). Place them on the parchment paper and bake for 20 minutes. Remove them from the oven and let cool on the pan for 10 minutes.

Reduce heat to 325. Using a serrated knife, cut each log into 16 slices (1/2" each, with the ends cut off). Bake for 20 minutes, turning them over half way through. Cool and store.
